Last weekend, I went to Rizal to visit Mr. Inocencio's free-range chicken farm in Teresa town. His concept of raising organic birds is very sound and of course much, much healthier than that of "white" chicken.
Sasso is an acronym and it simply means selection of birds from the South and Southwest France. (Kabir, another breed of chicken grown free-range, is a word that means "big" in Arabic.)
He talked about his business and his chicken for more than three hours non-stop that day! The business, the farm and the market seems to be doing well and the market is expanding as consumers become more health conscious.
